I mentioned in my last post that I was cooking again. What this generally means in practice is that I look up a dinner recipe, a side item recipe, and a desert recipe, and I make them. Of course, since I live alone, and I don't eat all that much, these three recipes usually feed me around a day or two past the point when I'm tired of eating the same thing over and over again. Even really yummy stuff, I generally am more than ready not to eat any more when I finish. However, I've found an exception: a recipe for Chocolate Parfaits, also now known as "the parfaits of super deliciousness." These are so yummy that I've bought enough ingredients to make them again.


Though this was a low fat, low cal recipe to begin with, as usual I modified it a fair amount. The original recipe is at myrecipes.com, which is my main source, and calls for:


Ingredients

* 1 (1.4-oz.) package fat-free, sugar-free chocolate instant pudding mix
* 2 cups 1% low-fat milk
* 1/2 cup light sour cream
* 1 (8-oz.) container fat-free frozen whipped topping, thawed and divided
* 3/4 cup chocolate graham cracker crumbs (4 cracker sheets)
* 1 tablespoon freshly grated chocolate

However, here's how I made it instead:

Ingredients

* 1 (1.4-oz.) package fat-free, sugar-free chocolate instant pudding mix
* 2 cups skim milk
* 1/2 cup Dannon Light and Fit sugar free fat free vanilla yogurt
* 1 (8-oz.) container fat-free frozen whipped topping, thawed and divided
* 3/4 cup chocolate Teddy Grahams, crumbled (my store didn't have any chocolate graham crackers)

Beyond that, I changed little:
Preparation

1. Whisk together first 3 ingredients in a bowl until blended and smooth. Fold in 1 1/2 cups whipped topping.

2. Spoon 1 Tbsp. crumbs into each of 6 (4-oz.) glasses, and top with 1/3 cup pudding mixture. Repeat layers with remaining crumbs and pudding mixture. Top each parfait evenly with remaining whipped topping and grated chocolate. Cover and chill at least 1 hour.

The recipe called for it to be split in to 6 servings, but at the moment I don't actually have 6 vessels of any kind appropriate for this, so I made it in to four servings instead. With the modifications that I made, split into four servings, each serving had 270 calories, and fills a coffee mug.

And is utterly amazingly super-delicious. I mean, I licked the bowl. And the measuring cup. And the spoon.

And very easy to make. You know you want to try them. The only bad thing I can say is that by the fourth day (again, four servings, four days) the crumbs were kind of soggy, but even soggy they were STILL yummy - but they were undeniably yummiest on the first day.

I'll admit I'm looking forward to making variations - I was thinking that I could get strawberries, and do something with that, and now I think I know what - strawberries, crumbed 'nilla wafers, and vanilla pudding - or I could make a low fat white cake (not angel food, I don't have the patience for hard-peaking egg whites) and use that - but I bet the mushiness factor would be less acceptable in that. But yeah. There are definitely ideas for expansion of this deliciousness to other flavors of deliciousness.

But for now? I bought enough ingredients to make it again. ;)

Oh, that sounds lovely! I just found a recipe for a chocolate mousse which sounds quite similar, though yours is much healthier! We will definitely be trying to soon.
